I think GoT would do wonders if they at least went to a 12 episode seasons. I can't imagine they don't film enough to make it happen.

The thing is, they don't really have the time or budget flexibility to pull it off. That's a lot of extra money to put out for a show that won't gain many subscribers if it expanded its season length. Adding to that, GoT subsidizes some of the less popular shows HBO has. HBO has always worked this way...they get a star show or two to help pay for the rest of the lineup.
And if they did, they'd be pressed for time. It would be much closer to a year-round thing for everyone involved if they stretched it out like that, which reduces flexibility in actor's schedules, directors' schedules, and it would give them less time to make sure everything's perfect before it hits the screen. IIRC by the time the season's begun, they're still doing post-processing on a lot of the episodes. Having that time crunch, they'd need more staff to handle the load, and the CGI firm they hire would have to spend a lot more time on creating the elements they contribute.

If they weren't subsidizing the other shows, and if everyone would be fine with spending a lot more money and having less flexibility and time to work on things, I think it could work, but that's just not the case. Especially in a show like this that requires a lot of specialized material. It's not like they're filming Six Feet Under.

It's hard to differentiate what I've watched and what I've read haha.

They left a massive plot line out of season 2 and just had Theon's fantastic storyline come to a withering halt at the end.
