Actually you are correct, i misspoke. Quintessential isn't the correct word. Traditional I think is what I was going for.

I need to shake it up a little bit. Been sticking with the same couple beers the past while.
Although there's some regulars I haven't had in a while I've been missing too (Dead Guy Ale for one). I've said this a million times, but man, I miss Red Racer. |

Man, very stoked for the Cascadian Dark Ale that I got started yesterday. Based on amber, crystal 60, and black patent malts, the stuff is nearly black! Generously hopped with Zeus, Cascade, and Centennial along the way, the wort tasted absolutely jaw-droppingly incredible before pitching the yeast. Honestly, I was tempted to drizzle a little over some vanilla icecream... so sweet and rich and dark and hoppy. The bitterness totally sneaks up on you, and dry-hopping with Centennial should give it a really nice aroma.
My only gripe is that I had to do the boil in a smaller pot than usual, so the gravity of the wort was sitting a little lower than I'd like after I diluted to the full batch size: about 1.057 for the 5 gallons - implying that this baby will settle around 6% alc. This'll also mean that it's not quite so bitter, but you make due with the gear you've got. One of these days I'll spring for a big ol' brewpot. If any of you hopheads see a Cascadian Dark Ale (or India Dark Ale, or India Black Ale) on the shelves, do yourself a favour and pick it up.
