Buffalo, NY. We love our food, beer, and hockey here. Not so much a city (ala NY, LA etc) as were are a large town.

Both the Weber and the Brinkmann double as grills.

The thing I like about my smoker is it's an indirect method, which allows me to cook it low 'n slow, just the way real BBQ is supposed to be done. But if money and space don't allow, there's nothing, absolutely nothing, wrong with using a direct heat method.

And too the low 'n slow method requires a lot time to do it right. So if you can't devote an entire day to the smoker, Bomm's way is the better option.

Mine came with two, half-circle inserts to use for offset, indirect heat cooking. you put each on opposite sides of the bottom grate, fill with your charcoal, and place a pan in the middle for drippings. Place your pre-soaked wood chips directly atop the charcoal. Then place your meat on the top cooking grate directly centered.

I did a pork loin this way for 2 1/2 hours and it came out spectacular. Now that's not as authentic as smoking it all day, but it's a great #2.

What's nice is the top cooking grate opens on two sides so you can refill your charcoal as need w/out having to remove the entire thing.

My next endeavor is purchasing a rotisserie, and spit grill a leg of lamb or rib roast.

Ah ha. I didn't realize they had them set up to do the indirect heating straight out of the box. Sounds like the perfect setup for Dyz.
