Shows like this (animated) have to end sooner or later, but most hang on too long. Really, it's hard for them not to. When you compare an animated sitcom to a real life sitcom, the animated show enjoys the luxury of not having their characters age. This is a huge advantadge in the conception of the show.
For example, Bob Saget's/Olsen twins Full House. This sho was conceptualized as the story of a widowed single dad rasing three small children with the help of a couple of other fellows. That concept has a limited timeline where once a certain amount of time goes by, said show is not the same anymore (small children become teens, single dad marries etc.) The Simpsons, grew to be the concept of an unconventional, yet traditional family. Bart was ten years old in season 1 and reamains ten years old twenty some odd years later. The story (structure) stays the same. However, as South Park and Family Guy etc. has at times, and especially The Simpsons in the last 1/2 dozen years at least, that also becomes stagnate or difficult to keep fresh after a while, but there is a much longer window than a real life show.

South Park has definitely still churned out some gems. Shake Weight anyone?
I'd be bummed to see it end. I always enjoy their take on current events because they present it unlike anyone else, provide a humorous take on it (if you're into that sort of thing I guess), and a lot of times present both sides of the argument. My wife absolutely hates the show, but that doesn't stop me from DVRing each week. I will say though, that last episode had me feeling really weird. I've never ended an episode of South Park with that feeling. Ever. The whole thing was just kinda ****ty.
