Last Saturday till late June without my 2 favourite things...beer and hockey.

What's room temp? And I ask that not in jest. There's cellar room temp, and there's family room August Summer room temp.

I assume room temp for beer/wine storage purposes is...55-60 fahrenheit or 12-14 celsius???

Fair question mate. In terms of storing beer for the purpose of allowing it bottle condition, the answer is that it really depends on the beer. As a general range, 50-60 is ideal. I'd try to not store it warmer than 70. If you have got an immense beer like Westy 12, you will be rewarded by storing it in the 55-60 range. You can store a 10%abv beer for quite a while like that and it will continue to improve for 5-10 years.

Storing it in the fridge wont do it any harm at all. It'll just condition much, much slower than it would at 55-60 degrees. A beer like Westy 12 probably needs a year of aging (at 55-60) before drinking it. I dont know if they age the beer before selling it. I would think they would, but I dont know for sure.

Wow 5-10yrs....did not know that. Thanks AW (and Loch for the article). Sitting on a beer that long is a test. I think quitting smoking would be easier...

You probably wouldn't go and store a Bud Light for anything longer than 2 months before it turns to shit. Prolly shit to begin with actually. Only proper beers with high ABV like Westy 12 could be stored for that length of time.

The following styles are the most likely styles that would benefit from this kind of treatment. Barleywines, imperial stouts, Belgian style beers that are 10%+.

It is hard to do. I haven't held onto a beer that long, but I did hang on to some bottles of wine for 5 years before. That is my personal best. 5 years.
