I'm sitting here working on a bottle of Blvd's Saison-Brett, and a question drifted into my head. Those of you who partake of bottle conditioned beers, in particular the 750ml bottles, do you always pour every drop, or do you sink pour the last finger or two containing the yeast remnants?
Just one of those odd thoughts/questions that occasionally roll through my head. I know some people don't like the last yeasty bits, others do. Kinda curious what side you guys come down on. Me personally it depends on the beer. One for sure that I enjoy every bit of is the aforementioned Saison-Brett. You can't be shy about drinking the yeasty bits if your going to tackle that one. No matter how gingerly you handle it, from the first pour, little bits of the Brettanomyces yeast strain float lazily about in your glass. The first half isn't much, but the second half is positively chock-a-block full of the Brett yeast bits.
