Grad school. I studied genetics and examined the accelerated evolution of yeast strains. Evolution happens faster on islands, especially island chains (e.g. the Galapagos), and the various monasteries of medieval Europe acted like islands, with the yeast spreading from island to island as monks traded brewing yeast strains. Then a major mutation happened that caused yeast to sink to the bottom of vats and lagers were born - an exact parallel of new species formation and divergence (in this case because brewers selected lager yeast and ale yeasts for different characteristics; i.e. different selective pressures and divergent evolution).

Next thing I knew I was hooked on dubbels.

That's cool man. Makes my degree seems so lame and useless (which it very much is).

i love the science of brewing. Just wish the American Breweries (the big 3) would learn more and stop making crappy imitation brew, but then again, people will buy it so I can't fault them all the responsibility.

It's okay Dyz. I'm an English major and I have my degree, plus a credential. Guess what I'm doing? I'm just subbing and basically a glorified babysitter. Not too shabby though. I'm working right now and talking about beer. It could be worse.
